Meal Calendar

I do the majority of cooking in the family and, like many moms, I struggle with getting dinner on the table after a busy day of kids and work. The constant battle of fixing something that will be eaten by most members of the family with minimal complaint, super healthy preferable not unhealthy and the proverbial “quick and easy.” So I have 4 weeks worth of recipes that check every box. We just repeat every four weeks and I swap out meals from the Substitute List whenever I feel adventurous or have more time on my hands.

Week 1:
Monday: Meatloaf, Mashed Potatoes, Steamed Broccoli, Orange Slices
Tuesday:  Salsa Chicken Soft Tacos, Flour Tortillas, Refried Beans, Shredded cheese, Tomato, Lettuce, Avocado
Wednesday: Butter Chicken with Paneer, Lentils, Rice, Berries
Thursday: Spaghetti & Meatballs, steamed green beans
Friday: Hot dogs, Chili, Tater Tots, Apple Slices
Saturday: Chili Verde, Avocado, Rice, Corn on the Cob
Sunday: Steak, Cashew Bok Choy

Week 2:
Monday:  Yummy Chicken, Lettuce, Peanuts, Corn Pudding/Corn on the Cob, Raw Broccoli & Carrots w/Ranch
Tuesday: Ground Beef Crunchy Tacos, Rice, Refried Beans, Shredded cheese, Tomato, Lettuce, Avocado
Wednesday: IP Mushroom Pork Chops, Mashed Potatoes or Cauliflower, Peas, Dill Cucumbers
Thursday:  Red Wine Pot Roast or Italian Pot Roast, Salad
Friday:  Flank Steak, Sautéed Bell Peppers & Onions, Avocado/Guacamole, Corn Tortillas
Saturday: Pizza, Salad
Sunday: Brinner – sausage, eggs, pancakes, hash browns, frozen blueberries

Week 3:
Monday: Sliders, Baked Beans, Apple Sauce, Orange Slices
Tuesday:  Vegetable Beef Soup or Beef Stew
Wednesday: Yogurt spiced chicken thighs, lentils, rice,  oven roasted carrots,  or Okra, Berries
Thursday: Cincinnati Chili, noodles, cheddar cheese, onions, steamed broccoli, apple slices
Friday:  Garlic Pork, Black beans, Rice, Corn Tortillas, Avocado, Diced Tomatoes, Cilantro
Saturday: Out
Sunday: Steak, Salad, Creamed Spinach or Napa Cabbage Salad

Week 4:
Monday:  IP Beef Short Ribs, Peas, Mashed Potatoes, Caesar Salad
Tuesday: Lemon Chicken, Steamed Broccoli, Pickled Beets
Wednesday: Stegt flæsk (Danish dish – it’s basically bacon. For dinner.), Dill Cucumbers, Salad
Thursday:  Ground Beef Crunchy Tacos, Rice, Refried Beans, Shredded cheese, Tomato, Lettuce, Avocado
Friday: Coconut Curry Beef, Riced Cauliflower, Bread and Butter Pickles
Saturday: Grilled Cheese, Chips, Fruit
Sunday: Flank Steak, Salad, Roasted Cauliflower

Substitute Meals:


Carnitas, Black beans, tortillas, avocado, diced tomatoes, cilantro, rice
