{"id":614,"date":"2018-07-14T12:08:16","date_gmt":"2018-07-14T12:08:16","guid":{"rendered":"http:\/\/worldofgrey.com\/?p=614"},"modified":"2018-12-30T13:59:56","modified_gmt":"2018-12-30T13:59:56","slug":"italian-casserole-low-carb","status":"publish","type":"post","link":"http:\/\/worldofgrey.com\/?p=614","title":{"rendered":"Italian Casserole (low carb)"},"content":{"rendered":"<p>What you need:<\/p>\n<ul>\n<li>1 lb ground beef<\/li>\n<li>1 cup low carb spaghetti sauce (like Rao&#8217;s)<\/li>\n<li>1 small onion, diced<\/li>\n<li>2 cloves garlic, minced<\/li>\n<li>3 oz tomato paste<\/li>\n<li>4 eggs<\/li>\n<li>1 tsp salt<\/li>\n<li>1\/4 tsp pepper<\/li>\n<li>2-3 cups shredded mozzarella cheese<\/li>\n<li>2-3 diced bell peppers<\/li>\n<li>2 6 oz cans of mushrooms, drained and rinsed (or fresh)<\/li>\n<\/ul>\n<p>What to do:<\/p>\n<p>Preheat oven to 350. Add the ground beef, water, onion, bell pepper and garlic to a pan (preferably large dutch oven that can go from stove to oven)\u00a0 and brown over medium heat. Drain excess water\/fat drippings. Put into a baking dish, if necessary. In bowl, whisk the spaghetti sauce, tomato paste, eggs, salt, pepper . Stir in 1 cup of cheese. Pour the mixture over the ground beef and stir it up a bit.
